Pork Spare Ribs - "Spicy as you Like"

A lesson well learned and I remember it well. As M & B's Mum (lover of the hot and spicy), I was serving up a new ribs recipe to the unsuspecting young M one Sunday evening. M was a lot younger then and admits that her taste buds have learned to accept some medium to hot and spicy delicacies. Hence the title………….”Spicy as you like”. I think that first time may have been a little too hot for a young M's taste, but both M and B have come back this recipe time and time again so you can tell it is now an M & B family favourite. These are also favourites of both Mr M and Mr B, but ribs are a fairly 'manly' food aren't they?

Ingredients

3 x 400 grm cans tomato pieces
½ cup chicken stock
½ cup finely chopped onion
3 tbls Worcester sauce
3 tbls brown sugar
2 tbls honey
1 tbls lemon juice
1 garlic clove minced
2 tsp dry mustard
1 tsp chilli powder (more or less as preferred)
Salt to taste – 1 - 2 tsp salt
4 kgs pork spareribs parboiled

Combine all ingredients except the ribs and bring to the boil. Reduce heat and simmer uncovered 30 minutes.


Place parboiled ribs on oven trays pour over sauce and bake in 170 oven for 1 ½ hours, basting and turning ribs a couple of times.


Delish…………. Meat just falls of the bone and there is much licking of fingers.
